Barbers mature cheddar is made using traditional starter cultures, West Country milk and age-old methods.

Every block is matured for up to 12 months to create it’s full flavour, character and beautifully mellow richness. It’s their dedication to using only milk from Somerset and Dorset cows, and hand cheddaring techniques, that have awarded Barber’s Protected Designation of Origin status (PDO)
